How To Avoid Knife Strife

I want to buy my husband a fillet knife for Christmas. What is the best knife for filleting red snapper, trigger fish and grouper. The knife he is currently using is not that great. Thank you so much for your help. Carole

When I was younger, I was 3rd Mate on a commercial fishing boat. We filleted hundreds of fish of many species on a daily basis. I needed a tough, no-nonsense, reliable knife, capable of handling tough fish like sharks (nothing on the planet will dull a knife quicker than shark hide), and be sharpened to a razor edge with just a few swipes on a sharpener. Almost everyone on board had the same knife….a 9 inch Forschener Professional Fillet/Boning knife. They weren’t cheap, but worth every penny. I still have mine. The edge has been completely re-ground 3 times, and after 30 years, still performs as well as the day I bought it. A few of the crew carried the almost identical knife made by Henkels. They were a bit more expensive, but like Snap On Tools, they have a feel like nothing else. I have one of those as well.
I am not advocating any particular brand. I just have personal experience with these. Talk to some fishing boat crewpersons, and ask them what they use.
If you are ever in doubt about fishing equipment, or techniques, find out what commercial fishers use. I’ll bet my reputation that it works, every time. It has to….
