What is the most sought after saltwater fish?

What would be a good bait to use salt water fishing off a dock I was thinking power bait or somthing what would you use ?

DO I NEED GLOWSTICKS FOR SALTWATER NIGHT SHORE FISHING? This is my first time fishing from shore at night in the hopes to land a shark. I’m using fresh chunks of Bonita and King Fish, 5/0 hooks, 90lb leader on 40lbs test line. Med.-Heavy action spinning rods, and a bag of chum.
